This is a recipe that my mom made that I absolutely loved. This is a two-part dish so be careful how you mix the ingredients. This dish is called oven porcupines because when you make the round meatballs with the rice, the rice sticks out like porcupine quills.

Ingredients

Directions

  1. Part 1Heat oven to 350 degrees.
  2. Mix meat, rice, water, onion, salt, garlic powder & pepper.
  3. Shape with rounded tablespoon into balls.
  4. Place in ungreased 8x8x2 baking dish.
  5. Part 2Stir together remaining ingredients; pour over meatballs
  6. Cover with foil & bake 45 minutes
  7. Remove foil & bake 15 minutes maybe slightly more depending on how soft you want the rice to be.
